Ingredients
Chocolate rum and raisin slice
- 125 gram butter, chopped coarsely
- 200 gram dark eating chocolate, chopped coarsely
- 1/2 cup (110g) caster sugar
- 1 cup (170g) raisins, chopped coarsely
- 2 eggs, beaten lightly
- 1 1/2 cup (225g) plain flour
- 1汤匙黑朗姆酒(见注释)
Method
Chocolate rum and raisin slice

1Preheat oven to 160°C (140°C fan-forced).

2Grease 20cm x 30cm lamington pan.

3In a medium saucepan, stir in butter, chocolate, sugar and raisins over low heat for about 2 minutes, or until chocolate is melted. Cool to room temperature.

4Stir remaining ingredients into chocolate mixture. Spread into pan.

5Bake slice for about 30 minutes. Cool in pan before cutting into squares. Serve.
Notes
We like to use an underproof rum, but, if you like, use the stronger overproof variety.
