Chorizo borlotti beans
- 2 chorizo sausages, sliced diagonally
- 2 400 gram cans borlotti beans, rinsed
- 1/4 cup lemon juice
- 1/3 cup chopped flat-leaf parsley
- 1 tablespoon finely grated lemon zest
Method
Chorizo borlotti beans

1Heat a large frying pan over moderate heat. Add chorizo; cook for 2 minutes each side or until lightly browned.

2Add beans; cook and stir for 1 minute or until heated.

3Remove pan from heat; stir in juice and parsley. Season. Serve sprinkled with zest.
Notes
It's important to cook the chorizo over moderate heat so the juices in the pan don't evaporate. You'll need 1 large lemon. Grate zest from lemon before juicing.
