Chorizo borlotti beans
  • 2 chorizo sausages, sliced diagonally
  • 2 400 gram cans borlotti beans, rinsed
  • 1/4 cup lemon juice
  • 1/3 cup chopped flat-leaf parsley
  • 1 tablespoon finely grated lemon zest

Method

    Heat a large frying pan over moderate heat. Add chorizo; cook for 2 minutes each side or until lightly browned.

    Add beans; cook and stir for 1 minute or until heated.

    Remove pan from heat; stir in juice and parsley. Season. Serve sprinkled with zest.

Notes

It's important to cook the chorizo over moderate heat so the juices in the pan don't evaporate. You'll need 1 large lemon. Grate zest from lemon before juicing.
