Creamy angel hair pasta

Ingredients
- 500 gram angel hair pasta
- 40 gram butter
- 3 rashers rindless bacon, finely sliced
- 2 tablespoon capers, rinsed, drained
- finely grated zest and juice of 1 lemon
- 1/2 cup semi-dried tomatoes, drained, roughly chopped
- 300 millilitre lite sour cream
- 50 gram baby spinach leaves or baby rocket
- grated parmesan to serve
Method

1In a large saucepan of boiling, salted water, cook pasta following packet instructions. Drain well, reserving 1 ½ cups cooking liquid.

2Melt butter in a saucepan over medium heat. Sauté bacon for 4-5 minutes until crisp. Add capers and lemon zest.

3Add hot pasta (reserving one-third – see recipe below), reserved cooking liquid, lemon juice, tomatoes, sour cream and spinach. Toss until warmed through. Season to taste, then serve sprinkled with grated parmesan.
Notes
-If preferred, replace bacon with salami and add some sliced green olives or drained, flaked tuna.
