Creepy eyeball meatballs
- 500 gram lean beef mince
- 1/4 cup grated parmesan
- 1/4 cup semi-sun-dried tomatoes, chopped
- 1/4 cup chopped basil
- 1 egg, lightly beaten
- 2 tablespoon tomato paste
- 2 green onions, thinly sliced
- 20 stuffed green olives, halved
- tomato sauce, to serve
Method
Creepy eyeball meatballs

1Preheat oven to 200°C. Line 2 oven trays with foil.

2In a large bowl, combine mince, parmesan, tomatoes basil, egg, tomato paste and onion. Season to taste and mix well.

3Using wet hands, shape level tablespoonfuls of mixture into balls. Arrange on trays. Press a half olive into each meatball. Chill for 20 minutes.

4Spray meatballs with oil. Bake for 15-20 minutes, until golden and cooked through. Serve meatballs with tomato sauce.
