Ingredients
Curried beef and couscous
- 1 1/4杯(310毫升)水
- 1 1/2 cup (300g)couscous
- 600 gram beef eye fillet steaks, sliced finely
- 1 tablespoon grated fresh ginger
- 2 clove garlic,crushed
- 3 cardamom pods, crushed
- 1 teaspoon cumin seeds
- 1 tablespoon vindaloo curry paste
- 2 tablespoon vegetable oil
- 2 medium_piece (300g) brown onions, sliced
- 2 small_piece (260g) tomatoes, chopped
- 1/4 cup (60ml) yogurt
- 1 beef stock cube
- 1/3 cup (80ml) water, extra
- 1 tablespoon fresh coriander leaves, chopped
Method
Curried beef and couscous

1Bring the water to a boil in saucepan, add couscous, cover, stand 5 minutes or until water is completely absorbed.

2Combine beef with ginger, garlic, cardamom, cumin and paste in bowl. Heat oil in large saucepan, cook beef mixture, in batches, until tender. Remove from pan.

3Add onion to same pan, cook, stirring, until soft. Return beef to pan with couscous, tomato, yogurt, crumbled stock cube and extra water, stir over heat until hot.

4Serve sprinkled with fresh coriander.
