Curried beef and couscous
  • 1 1/4杯(310毫升)水
  • 1 1/2 cup (300g)couscous
  • 600 gram beef eye fillet steaks, sliced finely
  • 1 tablespoon grated fresh ginger
  • 2 clove garlic,crushed
  • 3 cardamom pods, crushed
  • 1 teaspoon cumin seeds
  • 1 tablespoon vindaloo curry paste
  • 2 tablespoon vegetable oil
  • 2 medium_piece (300g) brown onions, sliced
  • 2 small_piece (260g) tomatoes, chopped
  • 1/4 cup (60ml) yogurt
  • 1 beef stock cube
  • 1/3 cup (80ml) water, extra
  • 1 tablespoon fresh coriander leaves, chopped

Method

    Bring the water to a boil in saucepan, add couscous, cover, stand 5 minutes or until water is completely absorbed.

    Combine beef with ginger, garlic, cardamom, cumin and paste in bowl. Heat oil in large saucepan, cook beef mixture, in batches, until tender. Remove from pan.

    Add onion to same pan, cook, stirring, until soft. Return beef to pan with couscous, tomato, yogurt, crumbled stock cube and extra water, stir over heat until hot.

    Serve sprinkled with fresh coriander.
