Ingredients

Date and apricot creamy rice
  • 1 litre (4 cups) milk
  • 2/3 cup caste sugar
  • 1 cinnamon stick
  • 2 teaspoon finely grated lemon zest
  • 1/2 cup uncooked arborio rice
  • 1/2 cup coarsely chopped dried apricots
  • 1/2 cup coarsely chopped fresh dates
  • 1/4 cup coarsely chopped roasted unsalted pistachios

Method

    In a medium saucepan, bring milk, sugar, cinnamon and zest to the boil. Gradually stir rice into boiling milk mixture.

    Reduce heat; simmer, covered, stirring occasionally, for 1 hour or until rice is tender and liquid is almost absorbed.

    Discard cinnamon stick; stir in apricots and dates. Serve rice, sprinkled with nuts.

Notes

Mixture is not suitable to freeze.
