Ingredients
Date and apricot creamy rice
- 1 litre (4 cups) milk
- 2/3 cup caste sugar
- 1 cinnamon stick
- 2 teaspoon finely grated lemon zest
- 1/2 cup uncooked arborio rice
- 1/2 cup coarsely chopped dried apricots
- 1/2 cup coarsely chopped fresh dates
- 1/4 cup coarsely chopped roasted unsalted pistachios
Method
Date and apricot creamy rice

1In a medium saucepan, bring milk, sugar, cinnamon and zest to the boil. Gradually stir rice into boiling milk mixture.

2Reduce heat; simmer, covered, stirring occasionally, for 1 hour or until rice is tender and liquid is almost absorbed.

3Discard cinnamon stick; stir in apricots and dates. Serve rice, sprinkled with nuts.
Notes
Mixture is not suitable to freeze.
