Ingredients
Deep-fried oysters with chilli dressing
- 24 oysters on the half shell
- 1/3 cup (55g) cornmeal
- vegetable oil, for deep-frying
Chilli dressing
- 2 tablespoon white wine vinegar
- 1/4 cup (60ml) olive oil
- 1/2 teaspoon sugar
- 1 tablespoon finely chopped fresh flat-leaf parsley
Method
Deep-fried oysters with chilli dressing

1Preheat oven to 150°C (130°C fan-forced). Remove oysters from shells. Wash shells, place on oven tray, heat 10 minutes.

2Toss oysters in cornmeal. Heat oil in large saucepan; deep-fry oysters, in batches, until browned lightly. Drain on absorbent paper. Serve oysters in hot shells; drizzle with chilli dressing.

3To make chilli dressing; combine ingredients in screw-top jar; shake well.
