Deep-fried whitebait with garlic dip
These crunchy little deep-fried whitebait are a real treat, especially dunked in delicious cucumber garlic dip. They make a great starter, or a great platter for sharing with friends.

Ingredients
Cucumber garlic dip
- 20 gram (¾ ounce) ghee
- 1/2 teaspoon each ground coriander and ground cumin
- 3/4 cup (210g) yoghurt
- 1 lebanese cucumber (130g), seeded, chopped finely
- 1 clove garlic, crushed
- 1 tablespoon lemon juice
Deep-fried whitebait
- 1 cup (150g) plain (all-purpose) flour
- 1/4 cup coarsely chopped fresh coriander (cilantro)
- 500 gram (1 pound) whitebait
- vegetable oil, for deep-frying
Method
Deep-fried whitebait with cucumber garlic dip

1To make cucumber garlic dip; heat ghee in small saucepan; cook ground spices, stirring, until fragrant, cool. Combine yoghurt, cucumber, garlic and juice in small bowl for dip; stir in spice mixture.

2Combine flour and fresh coriander in large bowl; add whitebait, in batches, toss until coated.

3Heat oil in medium saucepan; deep-fry whitebait, in batches, until browned and cooked through. Drain on absorbent paper.

4Serve with cucumber garlic dip.
