French toast with berries and almonds
  • 1/2杯低脂牛奶(125毫升)
  • 2 large eggs
  • 1汤匙糖
  • 1 teaspoon vanilla extract
  • 8 slice thick wholegrain bread
  • 1 punnet strawberries, sliced
  • 1 punnet blueberries or raspberries
  • 2 tablespoon flaked almonds, toasted
  • maple syrup or honey, to serve

    In a shallow bowl lightly whisk together milk, eggs, sugar and vanilla extract. Dip bread slices in mixture, turning to coat, set aside to absorb for 1 minute.

    Spray a large frying pan with cooking oil and heat on medium. Lift bread slices from egg mixture with a slotted spatula, letting excess drain off, cook in batches for 2 minutes each side, until puffed and golden. Transfer to heated plates.

    Top french toast with berries and sprinkle with almonds. Drizzle with maple syrup or honey and serve.
