Ingredients
新鲜番茄通心粉
- 4 vine-ripened tomatoes, finely chopped
- 1 red onion, finely chopped
- 1/2 gram flat-leaf parsley, finely chopped
- 2 tablespoon basil, sliced, plus extra leaves
- 2 tablespoon olive oil
- 1 tablespoon baby capers, rinsed, drained
- 1 lemon, zest of
- 375 gram penne pasta
- 100 gram crumbled feta
Method
新鲜番茄通心粉

1In a salad bowl, combine tomatoes, onion, herbs, oil, capers and zest.

2Cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well.

3Toss feta and pasta through salad mixture. Season to taste. Serve topped with extra basil leaves.
Notes
Instead of feta, toss buffalo mozzarella through hot pasta just before serving.
