Fried rice
Fried rice is a popular takeaway dish. Make your own at home by cooking the rice the night before and then refrigerating it until ready to use.

Ingredients
Fried rice
- 2 tablespoon oil
- 4 cup cooked jasmine rice, cooled
- 2 tablespoon soy sauce
- 1/2 cup shrimps
- 1/2 cup chopped ham
- 1/2 cup shredded cooked chicken
- 3/4 cup frozen mixed vegetables
- 4 spring onions, finely sliced
- 2 eggs, lightly whisked
- 1/2 cup cashew nuts, roasted
Method

1Heat oil in a wok over a high heat and add cold rice, breaking up any clumps. Add soy sauce, shrimps, ham, chicken, veges and spring onion, and toss well.

2Stir-fry for 4 to 5 minutes, until ingredients are hot.

3Pour in the whisked eggs and toss continuously until egg has set - this will only take a couple of minutes.

4Spoon fried rice into serving bowls and serve hot, topped with cashew nuts and extra spring onion, if desired.
