Fried whitebait with herbed mayonnaise
- 100 gram fresh whitebait

Herbed mayonnaise
- 1/4 cup mayonnaise
- 1 teaspoon finely grated lemon zest
- 1 tablespoon chopped parsley
- 1 tablespoon chopped chives

Fried whitebait with herbed mayonnaise

1Toss whitebait in flour, shaking off excess. Heat oil in a frying pan on high. Shallow fry 1 minute, splashing with oil, until golden. Drain on paper towel.

2To make mayonnaise: In a small bowl, combine all ingredients. Season to taste.
