Ingredients

Fried whitebait with herbed mayonnaise
  • 100 gram fresh whitebait
  • 1/4杯纯面粉,经验丰富

Herbed mayonnaise
  • 1/4 cup mayonnaise
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped chives

Fried whitebait with herbed mayonnaise

    Toss whitebait in flour, shaking off excess. Heat oil in a frying pan on high. Shallow fry 1 minute, splashing with oil, until golden. Drain on paper towel.

    To make mayonnaise: In a small bowl, combine all ingredients. Season to taste.
