Fruit compote with honey yoghurt

A great source of both fibre and vitamins, plus calcium.

Ingredients

Fruit compote with honey yoghurt
  • 1 1/4 cup (310ml) orange juice, strained
  • 1 1/4杯(310毫升)水
  • 2 tablespoon honey
  • 1 cinnamon stick
  • 1 1/4 cup (200g) dried pears
  • 3/4 cup (110g) dried apricots
  • 8 (180g) fresh dates, halved
  • 200 gram honey yoghurt

Method

    In a medium pan, combine orange juice, water, honey and cinnamon stick. Bring to the boil.

    Add pears and simmer, uncovered, for 5 minutes. Add apricots and simmer, uncovered, for a further 3 minutes. Stir in dates and simmer 2 minutes.

    Discard cinnamon stick. Serve fruit warm with honey yoghurt.

Notes

This recipe can be made a day ahead.
