Garlic prawn, white wine and rocket spaghetti
Packed full of flavour, this tasty prawn pasta dish, tossed in a fragrant white wine sauce, is quick to make and is perfect for a romantic night-in.

Ingredients
Garlic prawn, white wine and rocket spaghetti
- 250 gram spaghetti
- 1 tablespoon olive oil
- 12 king prawns, shelled, deveined
- 4 clove garlic, minced
- 3/4 cup (185ml) white wine
- 3/4 cup (185ml) cream
- 1 bunch rocket leaves, sliced
- sea salt and cracked black pepper, to taste
- handful flat-leaf parsley leaves, to serve
- lemon cheeks, to serve
Method

1In a large saucepan, bring salted water to boil. Cook the spaghetti according to packet instruction. Drain.

2Meanwhile, heat oil in a frying pan over high heat. Cook prawns 1 minute each side, until golden but not cooked through. Remove from the pan; set aside.

3Cook garlic 30 seconds. Add wine; reduce by half. Add the cream; bring to boil. Simmer 1 minute, until slightly thickened. Return prawns to the pan for 1-2 minutes, until cooked through.

4Add rocket and spaghetti; stir through. Season with salt and pepper. Sprinkle with parsley. Serve with lemon cheeks.
Notes
We would recommend using a medium-bodied white wine for this recipe.
