Ingredients
Gluten-free olive Parmesan polenta slice
- 1 large_piece (150g) zucchini
- 1/4 cup (35g) semi-dried tomatoes in oil
- 2 cup (500ml) water
- 2 cup (500ml) gluten-free chicken stock
- 1 cup (170g) polenta
- 1/2 cup (80g) seeded black olives, coarsely chopped
- 1/3 cup (25g) parmesan cheese, finely grated
- 2 tablespoon olive oil
Method

1Coarsely grate zucchini. Drain and finely chop tomatoes.

2Oil deep 20cm (8-inch) square cake pan, line base and sides with baking paper.

3Bring the water and stock to the boil in large saucepan, gradually stir in polenta. Reduce heat, simmer, stirring, about 10 minutes or until polenta thickens. Stir in zucchini, tomatoes, olives and cheese. Spread polenta mixture into pan, cover, refrigerate about 1 hour or until polenta is firm.

4Turn polenta onto board, cut in half. Cut each half into six slices.

5Heat oil in large frying pan, cook polenta until browned both sides.
