  • 4 large ripe bananas (920g), cut lengthways
  • 1/3 cup (80ml) maple syrup
  • 2 tablespoon malibu (see notes)
  • 1/4 cup (15g) shredded coconut, toasted

Method

    Combine maple syrup and liqueur in a small bowl; brush about a quarter of the mixture over the cut-sides of bananas.

    Cook bananas, cut-side down, on a heated lightly oiled grill plate (or grill or barbecue) for about 3 minutes or until lightly browned and heated through.

    Meanwhile, warm remaining syrup and coconut in a small saucepan.

    Serve bananas while hot, drizzled with warmed syrup mixture.

Notes

Malibu is the brand name of a rum-based coconut liqueur.
