Grilled lime and cinnamon chicken

Ingredients

Grilled lime and cinnamon chicken
  • 1/2 cup (125ml) lime juice
  • 3 cloves garlic, finely chopped
  • 1 tablespoon chopped fresh oregano, plus extra, to serve
  • 1 1/2 teaspoon ground cinnamon
  • 1 red chilli, finely chopped
  • salt and pepper, to season
  • 4 chicken breast fillets
  • steamed green beans, to serve
  • lime wedges, to serve

Method

Grilled lime and cinnamon chicken

    Combine lime juice, garlic, chopped oregano, cinnamon and chilli in a shallow dish and season to taste. Add chicken, turning several times to coat. Cover and chill for 2 hours to marinate, turning occasionally.

    Preheat a grill to high. Drain chicken, discarding marinade. Grill chicken for 5 minutes each side, until just cooked through. Serve with beans, lime wedges and oregano.

Notes

You can substitute with lemons or use lime juice in squeeze bottles, if limes are too expensive out of season. Score chicken in several places across breast to enhance flavour.
