Ingredients
Lamb and couscous stir-fry
- 3/4 cup couscous
- 1/4 cup chopped coriander
- 1 tablespoon olive oil

- 1 medium red onion, cut into wedges
- 1 medium zucchini, thinly sliced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon dried chilli flakes
- 1/2 teaspoon salt
- 1/4 cup plain yoghurt
- 1 clove garlic, crushed
Method
Lamb and couscous stir-fry

1Place couscous in a small heatproof bowl; stir in 3/4 cup boiling water. Cover with plastic food wrap; set aside for 5 minutes or until liquid is absorbed. Add coriander; fluff with a fork to separate grains.

2Heat a wok over high heat. Add oil; swirl to coat base and sides. Stir-fry lamb for 1-2 minutes or until browned. Add onion and zucchini; stir-fry for 1-2 minutes or until just tender.

4Combine yoghurt and garlic in a bowl. Spoon couscous into serving bowls; top with yogurt mixture. Serve at once.
Notes
You can use cold, cooked, long-grain white rice instead of couscous. You will need 3/4 cup cooked rice. Don't have a wok? You can use a large frying pan.
