Lamb burgers with tomato and mint salad

Ingredients
Lamb burgers with tomato and mint salad
- 2 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 3 teaspoon ground cumin
- 500 gram lamb mince
- 2 tablespoon chopped parsley
- 1 lemon, finely grated zest
- 4 rolls, halved, toasted
- 1 cucumber, peeled into ribbons
- greek-style natural yoghurt, mint leaves, to serve
Tomato and mint salad
- 1 1/2 cup finely shredded baby cos lettuce
- 1 large tomato, finely chopped
- 2 tablespoon finely chopped mint
Method
Lamb burgers with tomato and mint salad

1In a large frying pan, heat half the oil on medium. Saute onion and garlic for 3-4 minutes, until tender. Stir in cumin and cook 1 minute. Cool.

2In a large bowl, combine lamb, onion mixture, parsley and zest. Season to taste. Shape mixture into 4 evenly sized patties.

3Heat a barbecue plate on medium and brush with remaining oil. Cook patties for 4-5 minutes each side, until browned and cooked through. Drain on paper towel.

4Top bases of rolls with cucumber, salad, then patties. Top with yoghurt and mint leaves. Cover with top halves of rolls.

5In a bowl, combine all ingredients Season to taste.
Notes
If liked add some crumbled feta to the salad. Patties can also be cooked in a frying pan on medium.
