Ingredients

Lamb, rice and cauliflower salad
  • 2 tablespoon woolworths select vegetable oil
  • 500 gram cauliflower, cut into small florets, blanched
  • 150 gram sugar snap peas, trimmed
  • 1 red onion, halved, cut into wedges
  • 1 tablespoon grated fresh ginger
  • 1 fresh long red chilli, sliced
  • 500 gram lamb mince
  • 1 clove garlic, crushed
  • 1/3 cup kecap manis
  • 1 teaspoon five-spice
  • 250 gram packet woolworths select microwave jasmine rice
  • 2 spring onions, thinly sliced

    Heat half the oil in a large frying pan on high. Add cauliflower, peas, onion, ginger, half the chilli; cook, stirring, for 3 minutes until golden. Transfer to a plate.

    在相同的pan, heat remaining oil on high. Add mince and garlic; cook, stirring, breaking up any lumps, for 4 minutes until browned. Add kecap manis and five-spice. Bring to the boil; cook for 2 minutes.

    Heat rice following packet instructions. Toss rice and cauliflower mixture through mince; cook, stirring, for 3 minutes.

    Sprinkle salad with onion and serve topped with sliced chilli.
