Ingredients

  • 2 tablespoon vegetable oil
  • 2 leeks, pale section only, thinly sliced
  • 4 bacon rashers, rind removed, finely chopped
  • 2 cloves garlic, crushed
  • 375 gram broccoli, cut into florets
  • 4 eggs
  • 1 cup milk
  • 1 cup grated tasty cheese
  • mixed salad and garlic bread, to serve

Method

    Preheat oven to 180°C/160°C fan forced. Lightly grease a 4.5cm-deep 24cm (base diameter) round pie dish.

    Heat oil in a medium frying pan over moderate heat. Add leek bacon and garlic: cook and stir for 4-5 minutes or until leek has softened.

    Bring a medium saucepan of water to the boil over moderate heat. Add broccoli; cook for 2 minutes. Drain: place in prepared dish. Top with leek mixture.

    Whisk eggs, milk and cheese in a large jug. Season with pepper.

    Pour egg mixture over broccoli. Bake for 15 minutes.

    Reduce oven temperature to 170°C/150°C fan forced. Bake for 15 minutes more or until set at center.

    Remove from oven. Stand in pan for 5 minutes. Cut into wedges. Serve with salad and garlic bread.

Notes

Enjoy leftovers cold. You con use white onions instead of leeks if liked.
