Ingredients
Lemon date bubble bars
- 1 1/2 cup (250g) chopped dates
- 60 gram butter
- 1/2 cup sugar
- 1 tablespoon lemon juice
- 1/2 cup coconut
- 3 cup rice bubbles
- 1/2 cup roasted unsalted peanuts, chopped
- 40 gram butter, extra, melted
Lemon glaze icing
- 1 1/2 cup icing sugar
- 1 teaspoon soft butter
- 2 tablespoon lemon juice, approximately
Method
Lemon date bubble bars

1Grease a 19cm x 29cm lamington pan, line base and sides with paper, grease paper well.

2Combine dates, butter and sugar in large saucepan, stir constantly over heat without boiling for 5 minutes, or until smooth and pulpy. Remove pan from heat, stir in lemon juice, coconut, Rice Bubbles, peanuts and extra butter.

3Press mixture firmly into prepared pan, spread with icing, refrigerate until set before cutting.

4Lemon Glace Icing. Combine sifted icing sugar and butter in bowl, stir in enough juice to give a stiff paste. Stir over hot water until spreadable.
