Lime + coconut friands
  • 6 egg whites
  • 185 gram butter, melted
  • 3/4 cup (90g) linseed meal
  • 1/2 cup (40g) desiccated coconut
  • 1又1/2杯纯糖粉(240克)
  • 1/3 cup (40g) soya flour
  • 2 teaspoon lime rind, finely grated
  • 2 tablespoon lime juice
  • 1/4 cup (10g) flaked coconut

Method

    Preheat oven 200°C (80°C fan-forced). Grease 12-hole (½-cup/125ml) friand pan.

    Whisk egg whites in large bowl with fork until combined. Add butter, meal, desiccated coconut, sifted sugar and flour, rind and juice; stir until combined. Divide mixture among pan holes.

    Bake friands for 10 minutes. Remove pan from oven, sprinkle with flaked coconut, bake further 10 minutes. Stand in pan 5 minutes, turn, top-side up, onto wire rack to cool.

Notes

This recipe is gluten-free, wheat-free, yeast-free and nut-free. If the coconut is browning too quickly, cover the friands loosely with foil. storage Friands can be stored in an airtight container for up to 3 days.
