Ingredients
Limoncello melting moments
- 250 gram butter, softened
- 1/2 cup icing sugar, sifted
- 2 teaspoon limoncello liqueur
- 1 teaspoon grated lemon zest
- 1 1/2 cup plain flour
- 1/2 cup cornflour
Filling
- 100 gram butter, softened
- 3/4 cup icing sugar, sifted
- 1 tablespoon limoncello liqueur
- 1 tablespoon grated lemon zest
Method

1Preheat oven to moderately slow 160°C. Lightly grease and line 2 oven trays with baking paper.

2In a large bowl, beat butter, icing sugar, limoncello and zest until pale and creamy. Beat in combined sifted flours until just combined.

3Roll 1 level tablespoon of mixture at a time between floured hands. Arrange, 3cm apart, on trays. Flatten slightly using floured fork.

4Bake 15-20 minutes. Cool on tray 5 minutes before transferring to a wire rack to cool completely.

5Meanwhile, to make filling, in a bowl beat butter until pale and creamy. Beat in remaining ingredients until smooth.

6Spread over half biscuits and sandwich together with remaining halves.
