Ingredients
Little apple pies
- 750 gram can sliced apples, chopped
- 1/3 cup almond meal (ground almonds)
- 1 tablespoon finely grated lemon zest
- 1/2 teaspoon ground cinnamon
- 3 sheets frozen shortcrust pastry, thawed
- 1 egg, lightly whisked
- icing sugar, to dust
- vanilla ice-cream, to serve
Method

1Preheat oven to 220°C or 200°C fan forced Grease a 12-hole (3-cup) muffin tray.

2Combine apple, almond meal, zest and cinnamon in a bowl. Using a 10cm round cookie cutter, out 12 discs from pastry. Line prepared holes with pastry. Spoon apple mixture evenly into pastry cases.

3Cut remaining pastry into 5mm strips. Arrange strips in a lattice pattern over filling. Press strips to edge of pastry cases to seal trim excess. Brush with egg.

4Bake for 20 minutes or until golden. Stand in tray for 5 minutes. Transfer to a wire rack to cool slightly. Dust with icing sugar. Serve pies with the ice-cream.
