Ingredients

  • 125 gram butter, chopped
  • 1 cup (250g) caster sugar
  • 2 eggs, separated
  • 1 cup (150g) self-raising flour
  • 1 cup (90g) desiccated-coconut

Method

    Preheat oven to 180°C. Lightly grease a lamington pan (18cm x 28cm).

    Cream butter and half of caster sugar in a bowl using an electric beater until light and fluffy. Beat in egg yolks.

    Gently fold flour into creamed mixture. Chill for 10 minutes. Press into base of prepared pan using floured fingertips.
