Ingredients
Macaroon slice
- 125 gram butter, chopped
- 1 cup (250g) caster sugar
- 2 eggs, separated
- 1 cup (150g) self-raising flour
- 1 cup (90g) desiccated-coconut
Method

1Preheat oven to 180°C. Lightly grease a lamington pan (18cm x 28cm).

2Cream butter and half of caster sugar in a bowl using an electric beater until light and fluffy. Beat in egg yolks.

3Gently fold flour into creamed mixture. Chill for 10 minutes. Press into base of prepared pan using floured fingertips.

5Spread egg white mixture over base mixture. Bake for 20-25 minutes, until lightly golden and a skewer inserted into centre comes out clean. Cool, then cut into squares. Serve.
