Ingredients
Mixed berry french toast
- 1 loaf brioche bread
- 2 cup (280g) mixed berries
- 2 tablespoon caster sugar
- 1 cup (250ml) milk
- 4 eggs
- 1 teaspoon vanilla extract
- 50 gram butter
- 1 cup (250g) mascarpone
- 1 vanilla bean, seeds scraped
- 3 tablespoon icing sugar
- extra icing sugar, to serve
Method
Mixed berry french toast

1Cut brioche loaf into four 3cm slices, then make a large slit through the centre of each slice.

2Toss the berries in the sugar, then stuff into the centre of each brioche slice.

3Gently soak the brioche slices in the egg mix for 20 seconds each side.

4Heat the butter in a large fry pan and cook the brioche for three minutes each side or until golden brown.

5Place the mascarpone in a bowl with the vanilla seeds and icing sugar and mix to combine.

6To serve, cut the brioche in half and serve with a dusting of icing sugar and the vanilla mascarpone on the side.
