Ingredients

Mixed berry french toast
  • 1 loaf brioche bread
  • 2 cup (280g) mixed berries
  • 2 tablespoon caster sugar
  • 1 cup (250ml) milk
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 50 gram butter
  • 1 cup (250g) mascarpone
  • 1 vanilla bean, seeds scraped
  • 3 tablespoon icing sugar
  • extra icing sugar, to serve

Method

    Cut brioche loaf into four 3cm slices, then make a large slit through the centre of each slice.

    Toss the berries in the sugar, then stuff into the centre of each brioche slice.

    Gently soak the brioche slices in the egg mix for 20 seconds each side.

    Heat the butter in a large fry pan and cook the brioche for three minutes each side or until golden brown.

    Place the mascarpone in a bowl with the vanilla seeds and icing sugar and mix to combine.

    To serve, cut the brioche in half and serve with a dusting of icing sugar and the vanilla mascarpone on the side.
