Mustard and caper mayonnaise
There's no need to spend hours cooking with this simple zesty mayonnaise. Dill, garlic and mustard add to this smooth, flavoursome sauce that will make any meal pop.

Ingredients
Mustard and caper mayonnaise
- 2 egg yolks
- 2 tablespoon lemon juice
- 1 clove garlic, finely chopped
- 1/3 cup olive oil
- 1/3 cup light olive oil
- 2 tablespoon wholegrain mustard
- 2 tablespoon drained chopped capers
- 2 tablespoon chopped dill
- 2 teaspoon finely grated lemon zest
- cooked, crumbed prawns and mixed vegie salad, to serve
Method
Mustard and caper mayonnaise

1Process yolks, lemon juice and garlic until smooth. Combine oils in a jug. With motor running, gradually add oils in a thin steady stream until combined and mixture thickens.

2Transfer mayonnaise to a bowl; add mustard, capers, dill and zest. Stir until well combined. Season to taste with salt. (If the mayonnaise is too thick, whisk in 1-2 tablespoons water.)

3Arrange salad and prawns on plates. Serve with sauce.
