Mustard chicken and glazed parsnips

Ingredients
Mustard chicken
- 4 chicken marylands, skin on
- 60 gram butter, melted
- 1 tablespoon dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon honey
- 2 garlic cloves, crushed
- baby spinach leaves, to serve
Glazed parsnips
- 2 parsnips, sliced, cut into batons
- 2 tablespoon olive oil
- 1 tablespoon maple syrup
Method
Mustard chicken

1Preheat oven to hot, 200°C. Line a baking dish with foil or baking paper.

2Arrange chicken in a single layer in prepared dish. in a bowl, combine butter, mustard, oil, honey and garlic. Brush over chicken.

3Bake the chicken, turning once, for 25-30 minutes until cooked through.
Glazed parsnips

4In a bowl, toss together parsnip, oil and maple syrup. Cook in a frying pan over a low heat for 10-15 minutes until golden and tender, or bake when you bake chicken in a separate baking dish. Serve chicken with parsnip and spinach leaves.
