Ingredients
Orange and date couscous salad
- 1 cup (200g) couscous
- 1 cup (250ml) boiling water
- 2 medium_piece (480g) oranges
- 40 gram baby spinach leaves
- 1/2 small_piece (50g) red onion, sliced thinly
- 1/2 cup (70g) seeded fresh dates, sliced thinly
- 1 tablespoon olive oil
Method
Orange and date couscous salad

1Combine couscous with the water in medium heatproof bowl, cover, stand about 5 minutes or until water is absorbed, fluffing with fork occasionally.

2Meanwhile, coarsely grate rind from both oranges. Segment oranges over small bowl, reserve any juice in bowl (you need ¼ cup juice).

3Stir orange segments, reserved juice and remaining ingredients into couscous.
