Ingredients

Overnight date and muesli muffins
  • 1 1/4 cups (185g) plain flour
  • 1 1/4 cups (160g) toasted muesli
  • 1 teaspoon ground cinnamon
  • 1 teaspoon bicarbonate of soda
  • 1/2 cup (110g) firmly packed brown sugar
  • 1/2 cup (30g) unprocessed bran
  • 3/4 cup (120g) coarsely chopped seedless dates
  • 1 1/2 cup (375ml) buttermilk
  • 1/2 cup (125ml) vegetable oil
  • 1 egg, beaten lightly

Method

Overnight date and muesli muffins

    Combine ingredients in large bowl, stir until just combined. Cover, refrigerate overnight.

    Preheat oven to 200°C (180°C fan-forced). Grease 12-hole (⅓-cup/80ml) muffin pan.

    Divide mixture among holes of prepared pan.

    Bake muffins about 20 minutes. Stand muffins in pan for a few minutes before turning onto wire rack.
