Ingredients
Overnight date and muesli muffins
- 1 1/4 cups (185g) plain flour
- 1 1/4 cups (160g) toasted muesli
- 1 teaspoon ground cinnamon
- 1 teaspoon bicarbonate of soda
- 1/2 cup (110g) firmly packed brown sugar
- 1/2 cup (30g) unprocessed bran
- 3/4 cup (120g) coarsely chopped seedless dates
- 1 1/2 cup (375ml) buttermilk
- 1/2 cup (125ml) vegetable oil
- 1 egg, beaten lightly
Method
Overnight date and muesli muffins

1Combine ingredients in large bowl, stir until just combined. Cover, refrigerate overnight.

2Preheat oven to 200°C (180°C fan-forced). Grease 12-hole (⅓-cup/80ml) muffin pan.

3Divide mixture among holes of prepared pan.

4Bake muffins about 20 minutes. Stand muffins in pan for a few minutes before turning onto wire rack.
