Ingredients

Pad Thai noodles
  • 250 gram rice stick noodles
  • 2 tablespoon oil
  • 1 red onion, sliced
  • 2 clove garlic, crushed
  • 200 gram chicken breast fillet, sliced
  • 200 gram peeled green prawns, tails intact
  • 2 eggs, lightly beaten
  • 1/3 cup (50g) roasted peanuts, crushed
  • 1/4杯(60毫升)酸橙或柠檬汁
  • 1/4 cup basil leaves
  • 2 tablespoon brown sugar or palm sugar
  • 2 tablespoon fish sauce
  • 2 tablespoon coriander leaves, plus extra, to serve
  • 1 birdseye chilli, chopped

Method

Pad Thai noodles

    Prepare noodles according to packet directions; drain well and set aside.

    Heat oil in a wok on high. Stir-fry onion and garlic 1 minute. Mix in chicken and prawns; stir-fry 4-5 minutes, until cooked.

    Push mixture to side of pan. Add egg; stir-fry until just cooked.

    Toss through remaining ingredients and noodles; stir-fry 2 minutes. Serve sprinkled with extra coriander.
