Ingredients
Pad Thai noodles
- 250 gram rice stick noodles
- 2 tablespoon oil
- 1 red onion, sliced
- 2 clove garlic, crushed
- 200 gram chicken breast fillet, sliced
- 200 gram peeled green prawns, tails intact
- 2 eggs, lightly beaten
- 1/3 cup (50g) roasted peanuts, crushed
- 1/4杯(60毫升)酸橙或柠檬汁
- 1/4 cup basil leaves
- 2 tablespoon brown sugar or palm sugar
- 2 tablespoon fish sauce
- 2 tablespoon coriander leaves, plus extra, to serve
- 1 birdseye chilli, chopped
Method
Pad Thai noodles

1Prepare noodles according to packet directions; drain well and set aside.

2Heat oil in a wok on high. Stir-fry onion and garlic 1 minute. Mix in chicken and prawns; stir-fry 4-5 minutes, until cooked.

3Push mixture to side of pan. Add egg; stir-fry until just cooked.

4Toss through remaining ingredients and noodles; stir-fry 2 minutes. Serve sprinkled with extra coriander.
