Ingredients
Pan-fried trout with macadamia and orange
- 50 gram butter
- 2 tablespoon olive oil
- 4 whole trout, cleaned, heads removed
- 1/2 cup seasoned flour
- 1/4 cup chopped macadamias
- 1/4 cup flaked almonds
- 1 clove garlic, crushed
- finely grated zest of 1 orange
- juice from 1/2 an orange
- 2 tablespoon chopped parsley
- steamed chat potatoes, steamed green beans, crusty bread, to serve
Method
Pan-fried trout with macadamia and orange

1Heat 30g butter and 1 tablespoon oil in a large frying pan on medium.

2Toss trout in seasoned flour, shaking off excess. Cook, 4-5 minutes each side, until flesh flakes easily when tested with a fork. Transfer to a plate. Cover fish to keep warm.

3Heat remaining butter and oil in the same pan on high. Add nuts and garlic, cook, 1-2 minutes, until golden. Stir in zest and juice. Cook 1 minute.

4Pour sauce over fish. Sprinkle with parsley. Serve with vegetables and crusty bread, if you like.
Notes
Don't just limit yourself to trout, this sauce is delicious with any type of fish.
