Pasta with asparagus

Asparagus is rich in vitamins and teamed up with pasta makes a healthy dish for any time of the year. Try boiling the eggs for a different twist on this classic Italian pasta.

Ingredients

Pasta with asparagus
  • 500 gram pasta of choice
  • 3 eggs, beaten
  • 90 gram butter
  • 1/2 cup (125ml) cream
  • 1/2 cup (40g) grated parmesan
  • 2 bunches asparagus, trimmed, blanched and cut into 3 lengths
  • chives and salad leaves, to serve
  • salt and freshly cracked black pepper, to serve

Method

Pasta with asparagus

    Cook pasta in plenty of boiling salted water for 10 minutes, following packet directions.

    Drain and return to saucepan. Quickly toss in eggs, butter, cream and parmesan on low heat.

    Stir in asparagus, top with chives and season to taste. Serve with salad.
