Ingredients

Pea, feta and mint fritters
  • 250 gram packet frozen peas, thawed, plus extra to serve, if liked
  • 2/3 cup sifted plain flour
  • 1/2 cup milk
  • 2 eggs, lightly beaten
  • 150 gram crumbled feta cheese
  • 2 tablespoon chopped mint, plus extra to serve
  • salt and pepper, to season
  • 2 tablespoon olive oil
  • roasted tomatoes, to serve

Method

Pea, feta and mint fritters

    Place half a packet thawed frozen peas in a food processor. Process until pureed. Transfer to a large bowl.

    Add plain flour, milk and eggs. Whisk to combine. Stir in remaining peas, feta cheese and chopped mint. Season to taste.

Notes

To roast tomatoes, place truss cherry tomatoes on an oven tray. Drizzle with olive oil and bake in a moderate oven, 180°C, for 10-15 minutes until tender.
