Ingredients

Pear and almond cake
  • 2 pears, peeled, cored, each cut into eight
  • 2 tablespoon maple syrup
  • 1 1/2 cup almond meal
  • 1/2 cup self-raising flour
  • 4 eggs
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 200 gram melted, cooled butter
  • icing sugar, for dusting
  • cream, to serve

Method

Pear and almond cake

    Preheat oven to moderate, 180°C. Lightly grease and line a 22cm round cake pan.

    Arrange pear slices evenly in base of pan. Drizzle with maple syrup. Set aside.

    In a large bowl, combine almond meal and flour.
  • 4
    In a separate bowl, whisk together eggs, sugar and vanilla. Mix in butter. Pour into almond meal mixture and lightly fold together. Pour over pears in pan.

    Bake 1 hour, or until cooked when tested with a skewer.

    Cook in pan 10 minutes before inverting onto a wire rack. Dust with icing sugar.
