Pear and almond cake

Ingredients
Pear and almond cake
- 2 pears, peeled, cored, each cut into eight
- 2 tablespoon maple syrup
- 1 1/2 cup almond meal
- 1/2 cup self-raising flour
- 4 eggs
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 200 gram melted, cooled butter
- icing sugar, for dusting
- cream, to serve
Method
Pear and almond cake

1Preheat oven to moderate, 180°C. Lightly grease and line a 22cm round cake pan.

2Arrange pear slices evenly in base of pan. Drizzle with maple syrup. Set aside.

3In a large bowl, combine almond meal and flour.

4In a separate bowl, whisk together eggs, sugar and vanilla. Mix in butter. Pour into almond meal mixture and lightly fold together. Pour over pears in pan.

5Bake 1 hour, or until cooked when tested with a skewer.

6Cook in pan 10 minutes before inverting onto a wire rack. Dust with icing sugar.
