Poached turkey with tuna mayonnaise

Ingredients
Poached turkey
- 2 kilogram turkey breast, boned, rolled
- 1 carrot, cut into chunks
- 1 celery stalk, cut into chunks
- 1 onion, cut into quarters
- handful of parsley sprigs
- 1 small bay leaf
- lemon rind, watercress sprigs or chopped parsley, to serve
Tuna mayonnaise
- 150 gram can tuna in oil, drained
- 4 anchovies
- 1/4 cup (50g) baby capers, drained
- 1 3/4 cup (525g) mayonnaise
- lemon juice, to taste
Method
Poached turkey with tuna mayonnaise

1Place turkey in a large saucepan with carrot, celery, onion, parsley and bay leaf, and add water to just cover. Bring slowly to boil, cover and simmer for 30 minutes. Remove from heat. Leave turkey in liquid, still covered, to finish cooking, then allow to cool completely in the liquid.

2Make Tuna Mayonnaise as per method below.

4Process tuna, anchovies, half of capers and 2 tablespoons of cold turkey cooking liquid in a food processor until smooth. Mix with mayonnaise, season and add lemon juice to taste. Add more cooking liquid if necessary to make a coating consistency.
