Ingredients
Pork and noodle san choy bow
- 200 gram dried thin rice stick noodles
- 1 tablespoon vegetable or peanut oil
- 500 gram packet pork mince with san choy bow seasoning sachet
- 1 tablespoon grated fresh ginger
- 1 fresh long red chilli, seeded, thinly sliced
- 1/4 cup oyster sauce
- 100 gram bean sprouts
- 2 baby cos lettuce, leaves separated
- small coriander sprigs, to serve
Method
Pork and noodle san choy bow

1Soak noodles in boiling water in a heatproof bowl for 10 minutes. Stir noodles to separate strands. Drain.

2Meanwhile, heat oil in a frying pan over high heat. Add mince; cook, stirring to break up lumps, for 5 minutes or until browned. Add ginger, chilli, oyster sauce, seasoning sachet and 1/3 cup water; cook for 1 minute or until fragrant.

3Add sprouts and noodles; cook, stirring, until heated. Spoon pork mixture into lettuce cups. Serve topped with coriander.
Notes
Try hokkien, ramen or singapore noodles.
