Ingredients

Pork and noodle san choy bow
  • 200 gram dried thin rice stick noodles
  • 1 tablespoon vegetable or peanut oil
  • 500 gram packet pork mince with san choy bow seasoning sachet
  • 1 tablespoon grated fresh ginger
  • 1 fresh long red chilli, seeded, thinly sliced
  • 1/4 cup oyster sauce
  • 100 gram bean sprouts
  • 2 baby cos lettuce, leaves separated
  • small coriander sprigs, to serve

Method

Pork and noodle san choy bow

    Soak noodles in boiling water in a heatproof bowl for 10 minutes. Stir noodles to separate strands. Drain.

    Meanwhile, heat oil in a frying pan over high heat. Add mince; cook, stirring to break up lumps, for 5 minutes or until browned. Add ginger, chilli, oyster sauce, seasoning sachet and 1/3 cup water; cook for 1 minute or until fragrant.

    Add sprouts and noodles; cook, stirring, until heated. Spoon pork mixture into lettuce cups. Serve topped with coriander.
