Pork hot pot

Ingredients
Pork hot pot
- 1 tablespoon plain flour
- 1 tablespoon smoked paprika
- 1 teaspoon cayenne pepper
- 2 tablespoon oil
- 500 gram pork scotch fillet or pork neck, cubed
- 1 onion, chopped
- 2 large potatoes, peeled, cubed
- 400 gram can diced tomatoes
- 1 cup chicken stock
- 1 cinnamon quill
- 1 bay leaf
- 300 gram can red kidney beans, drained, rinsed
- chopped flat parsley leaves, to serve
Couscous
- 1 1/2 cup couscous
- 1 1/2 cup boiling water or vegetable stock
Method

1Combine flour, paprika and cayenne. Heat half the oil in a saucepan on high.

2Toss pork in flour mixture. Cook pork in 2 batches, for 2-3 minutes, until browned.

3Heat remaining oil in same pan. Saute onion for 2-3 minutes. Add potato, tomatoes, stock, cinnamon and bay leaf. Stir pork through.

4Bring to boil then reduce heat. Simmer for 45 minutes, until pork is tender. Stir in beans and cook for 4-5 minutes, until heated through. Season to taste.

5Meanwhile, combine couscous and water. Cover and set aside for 5 minutes, until liquid is absorbed. Fluff with a fork.

6Serve hot pot on couscous, sprinkled with chopped parsley.
