Ingredients

Pork involtini and lemon sauce
  • 375 gram packet pork sizzle steaks
  • 1/2 seeded, sliced red capsicum
  • 2/3 cup grated cheese
  • 1/4 cup parsley leaves, plus extra to serve
  • 1/4 cup seasoned flour
  • 2 tablespoon olive oil
  • 2 clove finely chopped garlic
  • 3 teaspoon rinsed capers
  • 1/2 cup white wine
  • 150 millilitre thickened cream
  • 1 lemon, finely grated zest of plus 2 tablespoons juice

Method

    Preheat oven to moderate, 180°C. Line oven tray with baking paper.

    Top each steak with 2 slices capsicum, 1 tablespoon cheese and a few parsley leaves. Roll up. Secure with toothpick. Dust in flour.

    Heat oil in pan on high. Fry pork rolls 6-8 mins, turning, until golden. Transfer to tray. Bake 4-5 mins until cooked through.

    Using same pan, reduce heat. Saute garlic and capers 2-3 mins. Add wine; cook, stirring, 1 min. Stir in cream and lemon. Simmer 3-4 mins, until slightly thickened.

    Spoon sauce over pork and top with extra parsley leaves.
