Ingredients
Pork involtini and lemon sauce
- 375 gram packet pork sizzle steaks
- 1/2 seeded, sliced red capsicum
- 2/3 cup grated cheese
- 1/4 cup parsley leaves, plus extra to serve
- 1/4 cup seasoned flour
- 2 tablespoon olive oil
- 2 clove finely chopped garlic
- 3 teaspoon rinsed capers
- 1/2 cup white wine
- 150 millilitre thickened cream
- 1 lemon, finely grated zest of plus 2 tablespoons juice
Method
Pork involtini and lemon sauce

1Preheat oven to moderate, 180°C. Line oven tray with baking paper.

2Top each steak with 2 slices capsicum, 1 tablespoon cheese and a few parsley leaves. Roll up. Secure with toothpick. Dust in flour.

3Heat oil in pan on high. Fry pork rolls 6-8 mins, turning, until golden. Transfer to tray. Bake 4-5 mins until cooked through.

4Using same pan, reduce heat. Saute garlic and capers 2-3 mins. Add wine; cook, stirring, 1 min. Stir in cream and lemon. Simmer 3-4 mins, until slightly thickened.

5Spoon sauce over pork and top with extra parsley leaves.
