Ingredients
Prawns and bocconcini with spaghetti
- 400 gram angel hair spaghetti
- 1/4 cup (60ml) olive oil
- 3 garlic cloves, sliced
- 1/4 cup (50g) capers
- 500 gram green prawns, peeled and deveined, tails intact
- 8 cherry bocconcini, halved
- 4 green onions (shallots), finely sliced diagonally
- 1 lemon, juiced
- 1/2 cup finely shredded basil
Method

1Cook pasta in a saucepan of boiling salted water according to pack directions.

2Meanwhile, heat oil in a large frying pan on medium. Add garlic and capers, and cook for 1 minute. Stir through prawns and cook for 3-5 minutes, until they change colour.

3Drain pasta, then add to frying pan with bocconcini, green onions, lemon juice and basil. Toss for 1-2 minutes. Season to taste. Serve.
Notes
For a richer version of this dish, you can add a splash of cream.
