Salami and cheese impossible pie
This delicious pie is easy to make and is packed full of goodness and flavour from the salami, cheese and fresh veggies. Enjoy on it's own as a light lunch, or with a side salad for a more substantial dinner dish.

Salami and cheese impossible pie
- 2 cup milk
- 4 eggs
- 30 gram butter, melted
- 1/2 cup plain flour
- 1 cup grated tasty cheese
- 1/2 cup chopped salami
- 1/2 cup frozen spinach, thawed, squeezed of excess moisture
- 1/2 cup char-grilled capsicum, drained, chopped
- 130 gram can creamed corn
- 2 green onions, chopped, plus extra, to serve
- salad leaves, to serve
Method
Salami and cheese impossible pie

1Preheat oven to moderate, 180°C. Lightly grease a deep 25cm pie plate.

2In a large jug, whisk together milk, eggs and butter. Season to taste.

3Sift flour into a large bowl. Make a well in the centre; gradually whisk in milk mixture. Add half the cheese, plus salami, spinach, capsicum, corn and onion.

4Pour mixture into pie plate. Sprinkle with remaining cheese. Bake 45-50 minutes, until firm. Sprinkle with extra onion.

5Serve in wedges with salad.
