Ingredients
Salmon carpaccio
- 2 tablespoon soy sauce
- 2 tablespoon mirin
- 1 tablespoon lemon juice
- 1 teaspoon sesame oil
- 400 gram sashimi grade salmon
- large handful (40g) asian salad leaves
- 1 lemon, zest finely grated
- 1 large red chilli, seeded and finely chopped
- 1 teaspoon black sesame seeds
Method
Salmon carpaccio

1To make the dressing, place soy sauce, mirin, lemon juice and sesame oil into a bowl and stir to combine. Set aside.

2Using a sharp knife, cut the salmon into thin slices and divide between four serving plates.

3Place the salad leaves, lemon zest, chilli and a little of the soy dressing into a bowl and toss to combine.

4Top each salmon carpaccio with some of the salad, sprinkle the sesame seeds on top serve with extra dressing on the side.
