Salmon carpaccio

Ingredients

Salmon carpaccio
  • 2 tablespoon soy sauce
  • 2 tablespoon mirin
  • 1 tablespoon lemon juice
  • 1 teaspoon sesame oil
  • 400 gram sashimi grade salmon
  • large handful (40g) asian salad leaves
  • 1 lemon, zest finely grated
  • 1 large red chilli, seeded and finely chopped
  • 1 teaspoon black sesame seeds

Method

    To make the dressing, place soy sauce, mirin, lemon juice and sesame oil into a bowl and stir to combine. Set aside.

    Using a sharp knife, cut the salmon into thin slices and divide between four serving plates.

    Place the salad leaves, lemon zest, chilli and a little of the soy dressing into a bowl and toss to combine.

    Top each salmon carpaccio with some of the salad, sprinkle the sesame seeds on top serve with extra dressing on the side.
