Ingredients
Couscous salad
- 1 cup couscous
- 1 small, thinly sliced red onion
- 50 gram baby rocket leaves
- 2 teaspoon capers
- 1 tablespoon chopped dill
- 2 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dijon mustard
Salmon patties with couscous salad
- 400 gram can pink salmon
- 1 cup cooled mashed potato
- 1/2 cup dried breadcrumbs
- 1 lightly beaten egg
- 2 finely chopped green onions
- 1 tablespoon chopped fresh dill
- 1 lemon
- extra virgin olive oil
- couscous salad, lemon wedges and parsley
Method
Salmon patties with couscous salad

1In a large bowl, combine salmon (skin and bones removed), cooled mashed potato, dried breadcrumbs, egg, green onions, dill and zest. Season, mix well.

2Shape quarter-cupfuls of mixture into patties. Arrange on tray and chill, covered, 15 minutes.

3Heat some oil in a large frying pan on medium. Cook patties in two batches, 3-4 minutes each side, until golden. Drain on paper towel. Serve with couscous salad, lemon wedges and parsley leaves.

4Prepare couscous in large bowl following packet instructions. Fluff with fork.

5Add red onion, baby rocket leaves, capers and dill. Whisk together olive oil, lemon juice and mustard. Drizzle over salad before serving.
