Savoury date and feta tart
Salty, creamy feta and sweet dates combine wonderfully in this delicious tart recipe. Serve with handful of rocket and a drizzle of balsamic glaze for a tasty, easy light dinner

Ingredients
- 30 gram butter
- 1 red onion, sliced
- 4 eggs
- 1 cup cream
- 2 sheets ready-rolled short pastry
- 100 gram creamy feta cheese, plus extra to garnish
- 8 fresh dates, halved or torn
- 1 teaspoon chopped rosemary
- sea salt & cracked pepper
- rocket leaves and balsamic glaze, to serve
Method

1Preheat oven to 190ºC and lightly spray a fluted tart tin.

2Heat butter and sauté onion slices for 3-4 minutes, until softened and sweet.

3Whisk eggs and cream, then season.

4Line tart tin with the pastry sheets, trimming to fit. Arrange onion, feta and 6 of the dates evenly in the pastry shell, then pour over the egg mixture. Sprinkle with rosemary and bake for 30-40 minutes until pastry is golden and filling is set.

5Serve warm topped with extra feta and remaining dates. Sprinkle with rocket leaves and a drizzle of balsamic glaze.
