Savoury date and feta tart

Salty, creamy feta and sweet dates combine wonderfully in this delicious tart recipe. Serve with handful of rocket and a drizzle of balsamic glaze for a tasty, easy light dinner

Ingredients

  • 30 gram butter
  • 1 red onion, sliced
  • 4 eggs
  • 1 cup cream
  • 2 sheets ready-rolled short pastry
  • 100 gram creamy feta cheese, plus extra to garnish
  • 8 fresh dates, halved or torn
  • 1 teaspoon chopped rosemary
  • sea salt & cracked pepper
  • rocket leaves and balsamic glaze, to serve

    Preheat oven to 190ºC and lightly spray a fluted tart tin.

    Heat butter and sauté onion slices for 3-4 minutes, until softened and sweet.

    Whisk eggs and cream, then season.

    Line tart tin with the pastry sheets, trimming to fit. Arrange onion, feta and 6 of the dates evenly in the pastry shell, then pour over the egg mixture. Sprinkle with rosemary and bake for 30-40 minutes until pastry is golden and filling is set.

    Serve warm topped with extra feta and remaining dates. Sprinkle with rocket leaves and a drizzle of balsamic glaze.
