Ingredients

Shortbread
  • 250 gram butter, chopped, at room temperature
  • 1/3 cup caster sugar
  • 1 cup plain flour
  • 1/2 cup rice flour
  • 1/4 teaspoon salt
  • 2 tablespoon caster sugar

Method

    Preheat oven to slow, 150°C. Line 2 oven trays with baking paper.

    In a medium bowl, using an electric mixer, cream butter and sugar together until light and fluffy.

    Sift flours and salt together. Using a butter knife, mix into creamed mixture until well combined. Turn out onto a lightly floured surface. Gather dough into a ball.

    Divide in 2 equal portions and shape 2 x 18cm discs on prepared trays. Scallop edges and sprinkle sugar over.

    Bake for 35-40 minutes or until golden and cooked through. Cool completely on trays. Cut or break into wedges. Store in an airtight container.
