Ingredients

Spiced Indian meatballs
  • 2 tablespoon vegetable oil
  • 400 gram tray ready-made meatballs
  • 1 onion, chopped
  • 2 tablespoon hot curry paste
  • 500 gram sliced baby eggplant
  • 400 millilitre coconut milk
  • 6 tomatoes, chopped
  • 125 gram green beans, trimmed
  • coriander leaves, couscous, naan bread, to serve

Method

Spiced Indian meatballs

    In a large frying pan, heat half oil on medium. Cook meatballs 4-5 minutes, turning, until well browned. Transfer to a plate.

    Heat remaining oil in same pan. Saute onion 2-3 minutes, until golden. Add curry paste; cook 1-2 minutes, until fragrant.

    Stir in eggplant; cook 3-4 minutes, until tender. Mix in coconut milk and tomatoes. Cover; simmer 15-20 minutes.

    Return meatballs to pan with beans; simmer 4-5 minutes to heat through.
