Ingredients

Spiced pork fillet with caramel apples
  • 50 gram butter
  • 1 tablespoon olive oil
  • 500 gram pork fillet, trimmed, thinly sliced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon
  • 2 whole star anise
  • 1 large apple, cored, cut into wedges
Couscous
  • 1 1/2 cup couscous
  • 1 1/2 cup hot apple juice or boiling water
  • 20 gram butter
  • 400 gram can chickpeas, drained, rinsed
  • 1/3 cup roughly chopped parsley

Method

Spiced pork fillet with caramel apples and couscous
  • 1
Heat butter and oil in a large frying pan on high.
  • 2
Cook pork 2-3 minutes each side, until golden brown. Remove from pan. Set aside, loosely covered in foil, to rest.
  • 3
Add sugar and spices to pan, stirring. Toss apple through mixture 1-2 minutes, until tender and caramelised. Return pork to pan; heat through.
  • 4
Meanwhile, to make couscous, in a large heatproof bowl combine couscous, juice and butter. Cover; set aside 5 minutes. Fluff with a fork to separate grains. Stir chickpeas and parsley through. Season to taste.
  • 5
Serve pork and apple sauce on a bed of couscous.
