Spiced pork fillet with caramel apples and couscous

Ingredients
Spiced pork fillet with caramel apples
- 50 gram butter
- 1 tablespoon olive oil
- 500 gram pork fillet, trimmed, thinly sliced
- 1 tablespoon brown sugar
- 1/2 teaspoon ground cinnamon
- 2 whole star anise
- 1 large apple, cored, cut into wedges
Couscous
- 1 1/2 cup couscous
- 1 1/2 cup hot apple juice or boiling water
- 20 gram butter
- 400 gram can chickpeas, drained, rinsed
- 1/3 cup roughly chopped parsley
Method
Spiced pork fillet with caramel apples and couscous

1Heat butter and oil in a large frying pan on high.

2Cook pork 2-3 minutes each side, until golden brown. Remove from pan. Set aside, loosely covered in foil, to rest.

3Add sugar and spices to pan, stirring. Toss apple through mixture 1-2 minutes, until tender and caramelised. Return pork to pan; heat through.

4Meanwhile, to make couscous, in a large heatproof bowl combine couscous, juice and butter. Cover; set aside 5 minutes. Fluff with a fork to separate grains. Stir chickpeas and parsley through. Season to taste.

5Serve pork and apple sauce on a bed of couscous.
