Spicy green tomato relish
Green tomatoes aren't a particular variety, they're simply unripe; they can be picked off the vine at any time. They don't taste very nice raw, but as the main ingredient in this relish, they are a taste sensation.

Spicy green tomato relish
- 5 green tomatoes (1kg), sliced
- 1 brown onion (150g), sliced
- 1公斤小黄瓜黄瓜,切碎
- 1 green capsicum (150g), chopped
- 1/2 cup coarse cooking salt
- 2 cup (500ml) cider vinegar
- 1 cup (250ml) white vinegar
- 1 teaspoon mustard powder
- 1/2 teaspoon ground allspice
- 1/4 teaspoon mixed spice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground black pepper
- 1 cup (200g) firmly packed brown sugar
Method
Spicy green tomato relish

1Combine vegetables in large bowl, sprinkle with salt, cover; stand several hours. Rinse under cold water; drain well.

2Combine vegetables, vinegars and spices in large saucepan. Bring to a boil; simmer, uncovered, stirring occasionally, about 45 minutes or until vegetables are pulpy. Add sugar; stir over heat, without boiling, until sugar is dissolved. Bring to a boil; boil, uncovered, 15 minutes. Pour into hot sterilised jars; seal when cold.
