Squid stuffed with feta, parsley and chorizo
Fresh tender squid is beautiful served wrapped around a creamy, salty feta and chorizo filling. Serve with a squeeze of lemon juice for a light Summer meal or a gourmet starter.

Ingredients
Squid stuffed with feta, parsley and chorizo
- 50 gram feta, crumbled
- 1/2 1/2 chorizo sausage, finely chopped
- 1 tomato, diced
- 1/2 lemon, finely grated rind
- 1 cup (70g) fresh breadcrumbs
- 1/3 cup chopped parsley
- 1 tablespoon chopped oregano
- 6 squid tubes, cleaned
- 1 tablespoon olive oil
- lemon wedges, to serve
Method
Squid stuffed with feta, parsley and chorizo

1Preheat barbecue on medium. Combine feta, chorizo, tomato, lemon rind, breadcrumbs, parsley and oregano in a bowl. Season with pepper. Spoon into squid tubes and secure with toothpicks. Brush with oil.

2Cook squid 2 minutes each side. Drizzle with lemon juice. Cook another 2 minutes, until opaque and well browned. Serve with lemon wedges.
